SEMOLINA WITH RAISINS AND WALNUTS

Semolina with raisins and walnuts

Ingredients:

  • 100gr Terra Creta olive oil
  • 15gr of semolina
  • ½gr cinnamon
  • 40gr walnuts
  • zest of
  • ½ orange

For the syrup 

 Ingredients:

  • ½ liter of water
  • 250gr sugar
  • 40gr raisins

Preparation method:

1.We put the water with sugar and raisins to get a good boil to make the syrup.

2.In another pot we put the Terra Creta olive oil to burn and add semolina with walnuts and cinnamon.

3.Bake well until it gets a brown color and pour the syrup. Cook until the fluids evaporate. Add the zest and stir well. Serve in a form.

Cretan Cooking Classes had the opportunity to meet chef Joseph Hadad and cook together traditional Cretan dishes with TERRA CRETA products.

 

SNAILS WITH ROSEMARY

Snails with rosemary

Ingredients:

  • 1kgr snails
  • ½ water glass vinegar
  • ½ water glass flour (all purpose flour)
  • salt
  • pepper
  • rosemary

Preparation method:

1.Put all the snails in a big bowl filled with water and leave them until their heads come out (approximately 30 minutes).

2.Throw away all the snails whose heads have not come out.

3.Put the snails in a big pot with water to cover them and when the water starts to boil add 1 tbsp salt and boil them for 10 minutes.

4.Then throw the water and wash them very well with cold water.

5.Salt the snails , flour them and cook them in frying pan with sissling oil for 3 minutes with their openings facing the pan.

6.Add the rosemary, salt and pepper .Stir them and 2 minutes later add the vinegar.They are ready to be served.
